1 Chicken - 2 Dinners

Hard Truth. Groceries are expensive, especially when you have a family to feed. Meal planning, budgeting, and buying in bulk are ways to cut the bill.

 Another way to cut your grocery bill down is to find things that you can multiple meals out of . For example, a large pork loin can be broken down into pork chops, a loin roast, a pork roast and pork cubes for pork fried rice.

These recipes will give you 2 Meals from 1 Chicken!

Sometimes if you get a larger than average chicken you can get a lunch out of it as well. Something that I will include just in case you do have extra meat leftover.

For this particular post, we are going to do Grilled Chicken Burritos and Chicken Biscuit Bake, there are certainly other meals you could make with this but these are my favorite go tos. I will list other options below though as well.

The first thing is first to get your chicken. I buy whole foster farms chickens and you want it to be larger than if you were making a chicken for dinner. For extra convivence, you could grab a rotisserie chicken that's already been cooked but you will most likely end up with a smaller chicken than you want.

There's a lot of controversy about rinsing chicken. Mostly because of splatters that can happen and because there is a debate about rather or not its healthy to be rinsing chicken juices down our drain. First I want to say that obviously, I'm on the wash your chicken side. For many reasons but the first being that it gets all the slime off from the fluids that drain off the meat and sit in the bag at the supermarket. Secondly, it gives you a good time to feel or see feather or partial feathers that may of been missed before packaging. They pull out easy but its not pleasant however more so than if you are eating and get it in your mouth instead.
1.) Rinse Chicken
2.) Set Chicken On top of paper towels on cutting board
3.) Throughly Wash Sink with hot water and soap. Let water run and wipe down counters with Purell Disinfectant Spray safe for contact surfaces OR with a 50/50 mixture of water and bleach.
4.) Turn off water and return to cooking

Now You are left with this :
even if you have rotisseries you still have all these parts. You'll notice my towel under my cutting board which prevents it from sliding and my bucket of sanitizer next to it all.  I have 2 wings, 2 thighs and drumsticks, and 2 breasts.

For Grilled Chicken Burritos we will use the wing, thigh and drumstick meat. This will make 4-8 burritos. You may add 1/2 of the chicken breast if it is needed. The remaining breasts are reserved for the biscuit base.

  Grilled Chicken Burritos 

10 Soft Flour Tortilla's 
Sour Cream
Chicken Meat from 2 thighs, 2 drumsticks
, and 2 wings.  Add 1/2 breast only if needed
Refried Beans
2 Roma Tomatoes
Diced Red Onion
Guacamole -Optional for topping
Garlic Power 
Pepper & Salt

Season Chicken Meat with garlic powder, pepper, and salt. 
Cook chicken over med-low in a skillet with 1/8th-inch water and lid on the skillet. Check for doneness by temperature, or cutting and checking for white meat with clear fluids. 

Remove chicken and rinse the skillet 

Debone and shred chicken, season with salt and pepper. 

Layer refried beans, chicken, cheese, sour cream, tomatoes, and onion. close tightly. 
Add 1tsp of vegetable oil to the pan and allow it to get warm. Grill burritos, adding 1 tsp of oil between burritos. Cook until golden brown serve with guacamole if desired. 
A great side with this is a fruit salad. 

Chicken Biscuit Bake

1 can Pillsbury butter tasting biscuits 
2 boneless skinless chicken breast ( Use 1-1/2 if you used 1/2 for your previous recipe) 
1 1/2 C. Milk
Garlic Powder 
1 can green beans 
1 bag frozen carrots 
2 cans cream of chicken 
1 bag shredded cheese ( you'll use 3/4 bag) 

Dice chicken , season and cook.
Add 1 bag crinkle cut frozen carrots, 1 can green beans add salt and pepper cook until hot.

Add 2 cans cream of chicken soup, whisk in one can of milk. Cook until bubbling , extremely hot and thick. 
Spread in bottom of 13x9 pan
Sprinkle top with 3/4 bag of cheese
Open biscuits and place on top of vegetables and soup mix .

Place in 350 degree oven for 10-15 mins until biscuits are golden brown and fully cooked. 

Serve and enjoy

This is a all in one dish serve with cold milk or pink lemonade. If you really desire aside you could make a light salad. 

Alternatives : 
Chicken Burrito bowls, use rice as a base in the bowl top with shredded chicken seasoned with taco seasoning guacamole, sour cream, beans, and cheese add tomatoes and onion if desired. 

Chicken salad sandwiches - add your choice of greek yogurt, ranch or mayo to a bowl with shredded chicken , red or green grapes, diced dill pickle , sweet onion and black olives, put on your favorite bread!
