Cheesy Nacho-Dorito Casserole

Sometimes us moms really just need a meal that's a quick toss together but still tastes great. Ill admit there is some steps to this but if you are willing to wash a couple pots and a skillet then this is a recipe you will quickly fall in love with.



Here's What You'll Need :

1 Bag of Nacho Cheese Doritos ( You can use whatever flavor you want we like a lot of cheese in this family)

1 lb Ground Beef

1 Small bag shredded cheese or 2 cups (We use cheddar you can use pepperjack, cheddar, mozerella whatever you like I do not recommend blu cheese or feta though)

1 Can Refried Beans

2 cups milk

3 TBSP Butter

3 TBSP Flour

Optional toppings
Sour Cream
Olives
Lettuce
Tomato's 

Brown ground beef over med high heat. I use salt pepper and garlic powder to season ours. Sometimes If I have it or remembered to grab on Ill throw a taco seasoning mix in it and make it taco meat.

Warm up refried beans then spread evenly into a 13x9 pan

Layer cooked ground beef on top of beans

Crush 3/4 bag of Doritos into fine pieces and layer on top of hamburger and beans.

Take 3 tbsp of butter and 3 tbsp of flour into a skillet and make a roux. Slowly mix in the 2 cups of milk simmer over med heat. Pour salsa into blender or food processor , add thickened roux mixture and blend. This helps get chunks out of the salsa and can be skipped but if you have kids that are semi picky eaters the smoothness helps them love it even more and you don't have to hear ewww whats this!

Pour warm mixture evenly over layered meal .

Top with all the cheese evenly and place in preheated 350 degree oven. Bake for 25 mins or until cheese is bubbly. Top with sour cream , olives , or other items like lettuce and tomato's if you desire !
